Chicken Meatballs Recipe

For about 30 meatballs:

3 pounds of ground chicken thighs

1 pound of ground chicken breast

1 to 2 eggs – depending on the moisture desired

Breadcrumbs of some sort; either whole wheat or ground up rice cereal 

Chopped fresh spinach – for your taste

Use any of the following – depending on your liking:

Fresh ground parmesan cheese – or Romano if you like it better
Fresh cut basil
Oregano – fresh or dried
Poultry seasoning
Garlic powder
Onion salt
Celtic Sea Salt

Mix all ingredients thoroughly.  Shape into approximately 1 1/2" meatballs.  Place on lightly greased baking sheet and bake at 325º - 350º for 20 to 40 minutes tops.
